Hi Melina! The dining plan is connected to your resort stay. So if you have a seven night stay you will have the dining plan for seven nights, regardless of how many days you are visiting the parks. If you only wanted it for five days you might be able to change your reservation to five nights with the plan then make a separate "room-only" reservation for the last two nights without the plan. This would affect your dining booking window so that's something to consider.
