I'm not sure if being married to her at the time affects her take over if hulda dies. As far as I know, killing the original owner is the only way for Ysolda to take over. NPCs don't accomplish anything on their own. They just keep doing the same rudimentary stuff that's in their almost non-existent schedules every day.
